Chef Dallas McGarity is the executive chef and owner of The Fat Lamb in Louisville, Kentucky. A South Carolina native, McGarity has become one of the region's most celebrated chefs, known for his refined approach to comfort food. His work has earned a James Beard Award nomination, national media features, and the respect of the Southern culinary community. At Cipollini, McGarity continues to evolve his signature style—elevating classic Italian flavors through a distinctly Southern lens.
Tarek Hamada
Tarek Hamada, a native of Tunisia, brings more than two decades of distinguished hospitality experience to Cipollini. With a career rooted in passion, discipline, and genuine care for guests, he has built a reputation for excellence in Louisville’s dining scene. Tarek previously served in leadership roles at acclaimed local institutions such as Volare and Grassa Gramma, where he was instrumental in elevating service standards and creating unforgettable guest experiences.
His approach to hospitality is shaped by both his Mediterranean heritage and his extensive industry background, blending warmth, generosity, and attention to detail with refined operational expertise.
